Heather’s Everyday Granola
This is the granola I keep stocked in the house most weeks — simple, adaptable, and just sweet enough for breakfast or an afternoon snack.
Ingredients
4 cups old-fashioned oats
1 cup of your preferred nuts
¼ cup chia seeds
2 teaspoons sea salt
½ melted coconut oil
1/3 cup maple syrup
2 teaspoons vanilla extract
Instructions
Heat oven to 350ºF. Line a large baking sheet with parchment paper.
In a large bowl, stir together oats, nuts, chia seeds, cinnamon and sea salt.
In a separate mixing cup, stir together melted coconut oil, maple syrup and vanilla extract until combined. Pour the coconut oil mixture into the oats mixture and stir evenly until combined.
Spread the granola out evenly on prepared baking sheet.
Bake for 25 minutes, stirring half way through, until golden brown.
Let cool until the granola reaches room temperature.
Store in an airtight container at room temperature for up to 1 month.
Notes
Optional add-ins could Include: dried fruits or chocolate chips, (add these after granola has cooled) peanut butter (mixed into recipe before baking) or other spices (ground ginger, cloves, and/or nutmeg).
